Finding Popular & News Articles in Spanish
To search for websites from a specific country's domain, you can use the "site:" search function on Google (e.g. for websites from Argentina, include "site:.ar" in your search).

You can combine this trick to search even more specifically within educational institutions within a country (e.g. "site:.edu.ar" for educational sites in Argentina).
Another useful tool is to search for "filetype:pdf" to get PDF documents in your results.
